Abstract
This thesis presents the results of a scientific study on the antioxidant properties of capsaicinoid fractions of red pepper Capsicum annuum l. Capsaicinoids isolated from red pepper inhibited the LPO process in mitochondria induced by Fe2+/ascorbate and prevented damage caused by LPO. The results obtained prove that capsaicinoid has high antioxidant and membrane activity properties.
