Abstract
The artichoke (Cynara scolymus L.) plant is rich in many chemicals, and is distinguished from other plants by the high content of biologically active compounds in its leaves and seeds. In this thesis, the polyphenolic compounds in the leaves and seeds of locally grown artichoke plants were determined and compared using high-performance liquid chromatography (HPLC) method.
