This thesis studies the structure, enzymatic activity, and physiological significance of catalase and peroxidase enzymes, which are important components of cellular defense against oxidative stress. Catalase enzyme is one of the main antioxidant defense mechanisms, rapidly decomposing hydrogen peroxide into oxygen and water. Peroxidases have broad substrate specificity, oxidize phenolic compounds, and participate in protective reactions. The molecular structure of the enzymes, cofactors (e.g., heme), pH and temperature sensitivity, as well as differences in different organisms were analyzed based on scientific literature.
