In this article, the high-performance liquid chromatography (HPLC) method was used to determine the amount of phenolic compounds in the cucumber peel extract. During the study, standard solutions of major polyphenols such as gallic acid, salicylic acid, rutin, quercetin, apigenin, and kaempferol were prepared and their chromatographic analysis was performed. During sample preparation, an ultrasonic extraction method using ethanol as a solvent was applied.
